Gifts for chefs is a category full of things nobody uses. Novelty aprons, gadget drawers, another set of ramekins. A knife is the exception, provided it is a knife they would have chosen, which means the right length and a handle that suits a hand that is holding it for six hours rather than six minutes.
What is on this tag
Chef knives, santokus, cleavers and fish fillet blades. Blade lengths run 7, 7.5, 8 and 8.5 inches, with overall lengths from about 11 to 14. Steel is mostly Damascus of 1095 and 15N20, forge welded and acid etched, at 58 to 60 HRC, with plain 1095 high carbon at 54 to 58 HRC on part of the range. Handles are wood, stag horn, buffalo horn, rosewood, pakka wood and stabilized resin, usually with a brass or steel bolster and a mosaic pin. Each ships with a leather sheath, which is unusual in kitchen knives and considerably better than a drawer full of loose blades.
Carbon steel in a working kitchen
Be honest with the recipient about this. These are high carbon blades, not stainless. They take a keener edge and hold it longer, and they will patina from onions, tomatoes and lemon within a week. That grey and blue film is normal and mildly protective. What is not acceptable is leaving one wet in a sink or putting it in a dishwasher, which will rust the blade and cook the handle in a single cycle. The kitchen knife care notes cover the routine in about a paragraph.
Choosing a length
An 8 inch chef knife is the default for a reason and suits almost everybody. A santoku at 7 inches is better for someone with smaller hands or a small board. A cleaver is a specialist tool and a gamble unless you know they want one. The kitchen buyer notes compare the shapes. Browse the chef knives or the wider Damascus knives.
What comes with it
Each blade arrives with an edge on it and a leather sheath, so it can go straight into a knife roll rather than a drawer. Natural handle materials vary between pieces, and every Damascus pattern is different, which makes the knife identifiable in a shared kitchen. That is a practical benefit and not only a decorative one.
