A chef knife (8" curved blade) is the all-purpose workhorse. A nakiri is a flat-edged vegetable specialist. A santoku is the shorter Japanese all-rounder. A cleaver powers through dense vegetables and meat prep. All are hand-forged Damascus — pick by how you cook.
Caring for Damascus in the Kitchen
Hand-wash and dry immediately — never dishwasher. A light coat of food-safe mineral oil keeps the carbon Damascus pattern bright. Hone regularly on a ceramic rod and it will hold a screaming edge. These knives also make standout gift pairings with our EDC folders for the cook who carries.
Chef Knife FAQ
Are Damascus chef knives dishwasher safe?
No. Hand-wash and towel-dry immediately — dishwashers corrode carbon Damascus and damage wooden handles.
Will the blade react with acidic food?
Carbon Damascus develops a natural grey patina with use, especially with onions, citrus and tomatoes. It's harmless, protective and part of the character; oiling slows it.
What handle materials do you use?
Wenge, rosewood, pakka wood, bone and horn — often with brass or steel bolsters. Each product lists its exact materials.
How sharp do they arrive?
Shaving sharp. Each blade is hand-sharpened and inspected before shipping from Memphis, TN.
Can I engrave a chef's name on the blade?
Yes — blade engraving is available on most kitchen knives, a favorite gift for professional cooks and food lovers.
