What pattern welded Damascus actually is
Damascus is not a grade of steel. It is a method of making one. A smith stacks bars of two different steels, brings the stack to welding heat, and hammers them into one solid billet. The billet is drawn out, cut, folded back on itself and welded again, and every pass doubles the layer count. The figure on the finished piece is a cross section of those layers, opened by the bevel grind and brought out with an acid etch. Twist the bar before the last draw and the layers spiral into rope and raindrop. None of it sits on the surface. It runs through the full thickness of the blade. The 1095 and 15N20 pairing
Every Damascus blade in these categories is forge welded from 1095 and 15N20. 1095 is a plain high carbon steel that hardens hard and takes a very fine edge. 15N20 carries roughly two percent nickel, and the nickel is the reason it is in the stack. It shrugs off the acid used to etch the finished blade, so the 1095 layers darken and sink back a fraction while the 15N20 layers stay bright and stand proud. That difference in color and height is the pattern. Stack two steels that etch alike and you get a billet that welds well and shows almost nothing. Telling a forged billet from an etched print
Plenty of stamped steel is sold as Damascus. The checks take seconds. Start with the spine and tang rather than the flat. A forged billet carries its layers on every surface, so the spine and tang both show lines running across them. A printed blade is patterned on the flat and blank everywhere else. Next look at where the bevel meets the flat. On forged steel the pattern bends as it crosses that grind, because the grinder is cutting into a different depth of the stack. On a print the lines run straight over the bevel as though drawn on. Tilt the blade to a light and you should catch a faint relief where the softer layers etched back. Hardness and what it means in use
Damascus blades here are heat treated to 58 to 60 HRC. Plain 1095 pieces sit lower, at 54 to 58. The higher number holds a working edge longer and lets the maker grind a thinner bevel without it rolling. It also makes the steel less forgiving of side load. A blade at 60 will chip before it bends, a good trade for slicing and a poor one for prying.
Care, and the rust question
Both steels in the billet are carbon steels. Neither is stainless, and the etch that reveals the pattern opens the surface slightly, so a Damascus blade spots faster than a plain carbon blade left in the same conditions. Wipe it dry after every use, including after anything acidic, and leave a thin film of oil on it. Mineral oil is food safe and fine for the kitchen shapes. Leather holds damp against steel, so a knife going into a drawer for months should be stored out of its sheath. Choosing between the knife types
Start from the cutting you actually do. Hunting knives are the general field answer, a drop point of four to five inches that handles most of a day on its own. If the day is mostly hide, a Damascus skinner does that job faster, because its short sweeping belly rides the hide instead of puncturing it. The tracker splits its spine between a long cutting edge and a saw section for wood and bone, which suits camp work more than dressing game. Bowie knives are the large clip point classic, heavy enough in the forward third to chop, with the clip ground thin for finer work at the tip.
For the kitchen, chef knives earn a place on the board every day, ground thin and left hard so the edge lasts a week of prep. Fillet knives answer a narrower question, with a long flexible blade that follows a rib cage rather than cutting through it. Folding pocket knives trade a little strength for a knife that fits in a pocket. Daggers are double edged and symmetric, bought mostly for display, and they show a pattern better than almost anything because there is so much flat to look at.
