Living With a Carbon Kitchen Knife
Damascus is carbon steel. It takes a keener edge than stainless and it will spot if left wet. Hand wash, dry immediately, and wipe on a food-safe mineral oil occasionally. Never a dishwasher. The full range sits in chef knives.

Are Damascus kitchen knives practical or decorative?
Practical. Layered 1095/15N20 is a genuine cutting steel that takes a very fine edge, the trade against stainless is that it needs drying and occasional oiling.
Are these dishwasher safe?
No. Heat and standing water rust carbon steel and loosen natural handles. Hand wash and dry immediately.
What is the difference between a nakiri and a santoku?
A nakiri is a straight-edged vegetable knife built for push cuts. A santoku is a shorter all-rounder with a slight belly for meat, fish and vegetables.
Can a kitchen knife be engraved as a gift?
Yes, engraving on the blade or handle is available, and sets are among our most requested wedding gifts.
