The cleaver is one of the oldest knife forms still in daily use anywhere. Bronze age butchery sites turn up broad rectangular blades that would be immediately recognisable to a modern butcher, and the shape has survived unchanged for a simple mechanical reason: a wide, heavy blade lets gravity do the cutting. You are not pushing an edge through a joint, you are dropping a wedge onto it and letting momentum finish the job. Every other refinement in knife making has been about reducing effort. The cleaver solved that problem first and then stopped.

Why a cleaver is shaped like that
The broad rectangular blade is doing four separate jobs at once, and once you see them you cannot unsee them.
First, height. A tall blade means the mass sits away from your hand, so the knife converts a short drop into real force at the edge. Second, the straight edge. A chef knife rocks on a curve, but a cleaver wants full contact along its whole length at the moment of impact, so the edge runs nearly straight and lands flat. Third, the flat side. The broad face of a cleaver is a tool in its own right, for crushing garlic, for flattening a cutlet and for scooping a board of chopped onion into a pan in one movement. Fourth, the spine. It is thick, and that thickness is what carries the weight and keeps the blade from flexing when it meets bone or a frozen edge.
The edge geometry follows from all of that. A cleaver is ground as a wedge rather than a razor, with a slightly more obtuse bevel than a slicing knife, because a very fine edge would chip the first time it met a joint. What you get is an edge that stays intact under impact and that you can restore quickly. Use it for poultry, ribs, joints, squash, big root vegetables and coarse chopping. Do not use it as a pry bar and do not swing it at a frozen block, which is how people chip good cleavers.
Why Damascus and not stainless
The blade is real pattern welded steel, not an etched print. Layers of 1095 high carbon and 15N20 nickel steel are forge welded into one billet, folded and drawn out to 393 layers, then profiled and etched so the two steels show as light and dark bands through the full thickness of the blade.
For a cleaver the argument is toughness as much as edge. A soft stainless blade of this size would either deform at the edge under impact or need to be ground so thick that it stopped cutting. The 1095 at 58 to 60 HRC gives the hardness for a lasting edge, and the nickel in the 15N20 gives the toughness that keeps the blade from being brittle when it lands on bone. The cost is corrosion resistance, which you buy back with a dry cloth and a wipe of oil. We set the whole trade out in Damascus versus stainless.
Stag horn and walnut wood in the hand
A cleaver handle has a harder job than most, because it has to stay controlled while the blade is trying to keep moving. This one pairs stag horn with walnut wood, and the combination is doing real work. Walnut is dense, stable and close grained, and it puts enough weight behind the bolster to bring the balance point back toward your fingers so the blade does not run away from you. Stag horn adds a natural texture that stays grippy when your hands are wet or greasy, which is exactly when a heavy blade is most dangerous.
Both materials are natural and both vary. Walnut runs from pale honey to near chocolate depending on where in the tree it was cut, and antler carries its own marking. Keep the handle out of standing water, never put it near a dishwasher, and give it a wipe of food safe mineral oil once or twice a year so the wood stays fed and the horn does not check. Care and sharpening
Hand wash and dry it immediately. Never leave it in a sink and never put it in a dishwasher. Carbon steel will take a grey patina from onions and acidic food, which is normal and mildly protective, but salt and standing water will take it into rust. A thin film of food safe mineral oil before storage stops that entirely.
Sharpen it at a slightly wider angle than a slicing knife, around twenty degrees per side, because the edge has to survive impact. A 400 to 600 grit stone will reset a tired cleaver edge quickly, then take it to 1000 and stop. There is no benefit in polishing a cleaver to a mirror. This is a handmade piece from the Czech Republic, made in a workshop that still forges, grinds and finishes by hand instead of stamping parts out. The smiths there have kept the older way of working, and the wood, horn and leather are shaped and fitted by hand as well. Two pieces of the same design will never be identical, and that is part of what you are buying.

A note on handmade variation
This cleaver is hand forged. It is not machine made and it is not bulk produced, so the piece that arrives will not be a pixel for pixel copy of the photograph. The Damascus pattern comes out of every billet differently, the walnut was cut from a different board, and the stag horn came off a different antler.
The dimensions, the steel, the layer count, the hardness and the build are identical from one to the next. The grain, the tone, the pattern and the exact profile are not, because every one of these is worked by hand from natural materials. The variation is the signature of the process.
Frequently asked questions
Can this cleaver go through bone
Through poultry joints, rib sections and small bones, yes, and that is what the mass and the thick spine are for. It is not a bone splitter for beef femurs or frozen carcasses, and neither is any hand forged kitchen cleaver. Hit those and you will chip an edge that took hours to grind.
How is this different from a chef knife
A chef knife is a curved slicer that rocks on a board and finishes with a fine tip. A cleaver is a straight edged wedge with mass, built for impact, coarse chopping and heavy prep, with a broad face you can scoop and crush with. They are complementary rather than interchangeable.
Is it full tang
Yes. The tang runs the full profile of the handle with the walnut and horn fitted either side of it, which is the only sensible construction for a blade that gets used with force. It is also the reason the balance sits close to your hand rather than out at the tip.
Will mine look like the one in the photograph
Same size, same steel, same grind, different character. The Damascus figure and the handle colour will be their own. Anything hand forged from natural material varies, and that is what you are paying for.
