A big game hunting knife is a longer, heavier blade for elk, moose, bear and anything else that does not fit in a pickup bed whole. The job changes with the animal. On a deer a 4 inch blade does everything. On an elk you are cutting through a great deal more hide and working around joints that will not move for you, and a short knife turns a two hour job into a four hour one.

Steel is mostly Damascus of 1095 and 15N20, forge welded and acid etched, at 58 to 60 HRC, with plain 1095 high carbon at 54 to 58 HRC, some D2 and a little stainless. Blade length and what it costs you
A 7 or 8 inch blade gives you reach and enough mass to go through a joint, and it is worse at anything delicate. That is the trade. Most people who hunt big game regularly carry two, a long blade for the heavy work and a 3.5 inch for caping and detail. A full tang matters more here than on a deer knife, because a long blade under load puts real bending force where the handle starts. In the field

Sheath and carry
Every fixed blade here arrives with a stitched cowhide sheath cut for that blade and sized for a normal belt. A long knife rides better vertically on the hip than anywhere else, and it stays out of the way when you kneel. Leather stretches slightly to the blade over the first few weeks and then settles.
